5 minute flax wheat bread

My weakness is bread and anything similar to bread, like sweet buns etc…. As I learn more about nutrition, I’ve learned that we should eat breads, but they have to be a healthy type of bread. Whole grain breads are typically hard in texture, but this recipe makes it fluffy and wonderful. This bread is so healthy and so amazingly delicious. Our boys and my husband Tim, absolutely love it. I’ve been using this bread in Tim’s lunch boxes and also as grill cheese sandwiches for boys.

MORNING GLORY LOAF

This morning glory breakfast loaf is a nod to my favorite muffin–the morning glory muffin–a hearty, nourishing and rustic treat. We love morning glory muffins and are partial to these Sweet Potato Morning Glory Muffins which still remain popular at our house.

Ingredients

  • 1/2 cup walnut oil (can sub with grapeseed oil or melted coconut oil)
  • 1/2 cup honey
  • 1/2 cup unsweetened apple sauce
  • 2 eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1 1/2 cups whole wheat pastry flour
  • 1/2 teaspoon baking powder
